Our Featured Coffee.

Colombia Alto Occidente

Hailing from the Caldas region of Colombia, the Alto Occidente cooperative is comprised entirely of smallholder farmers. The rich, complex cup of tart cherry acidity tempered by honey and oak is a testament to the cooperativeโ€™s emphasis on agricultural investment and diligent processing.

Burundi Kibingo

Named after the Kibingo Washing Station to which over 3,500 smallholder farmers deliver their coffee cherries for processing, this particular coffee is a unique example of yeast inoculation. Seeking to better regulate fermentation, the processing team places the coffee in containers with Cima yeast prior to drying the batch on raised beds. The resulting cup is a rich combination of sweet fig with a bright, watermelon aftertaste.

Our Roasting System.

The Aillio Bullet R1 V2 is a highly responsive roasting system that uses induction heating and infrared bean temperature sensing to give the user a level of control unparalleled for roasters of its size. Empowered by this remarkable tool, Prometheus Coffee Roasters teases out subtle aromatics and flavor notes from remarkable green coffees the world over.
